Dear Ms. Aglaia,
I made fava just yesterday following your receipt of your vegetarian cookbook. It was delicious, simple combination of amazing flavors… just perfect. There was only one negative about that receipt…. it was not enough fava for our 4 member family! Next time I have to double the amount of all ingredients 🙂
Thank you for your books, receipts and passion you give to your cooking. As we moved to Athens last year, I hope to see you one day cooking personally on Kea island.
Best regards, Iva (Czech Republic)
Aglaia, what are the small, leafy greens in the top photo. Is that local dried oregano or some kind of mieature bay leaf? Eager to hit Kaluystan’s for some good capers and make this!
It is kritamo (κρίταμο) a wild slightly aromatic plant that grows near the sea. It is pickled and added to salads, to marinated sardins and other meze. Rock samphire is itrs botanical name.
