I currently have 4 quince on my kitchen counter perfuming my work space. I was planning to make some jam, but I keep putting it off since I’ve been craving a more unique preparation. With your recipe here, I think I’ve found it! I’ll let you know how it goes.
Thank you for the ongoing inspiration, and warm holiday wishes to you and Costas!

I NOW LOVE QUINCE! THANKS SO MUCH FOR THE SIMPLE, FLAVOR BOMB!
One issue with the garlic. It’s in the list of ingredients, but the instructions don’t say when/where to include.
I put the garlic in with the olive oil, quince and carrots at the very beginning and the result was totally delicious.
Excellent dish for a winter evening!!! The colors, smells and flavors are comforting and warming. I made the chicken version, but I will try it with walnuts, eggs and/or yogurt. I just wish quince were easier to find where I live.

Thanks Cheryl! You know this is GREAT with yogurt too.
Also with the yogurt & tahini sauce from my Chickpeas and Toasted Bread recipe, in Team Yogurt.

I didn’t see allspice in the recipe and made it as written. It was delicious. How much allspice next time?
